Its preparation was entrusted to the apothecaries or &#8220;pharmacists&#8221; and was almost exclusively intended for the clergy and the rich, in consideration of the fact that in addition to the &#8220;conceals&#8221; of orange, cedar, melon it also contained almonds, drugs and spices which were very expensive for the time. <strong>The Margherita panforte, which is part of the tradition of the classic recipe, faithfully reflects all the ancient phases in our production<\/strong>: the product is first cooked in large planetary pans (heated pans that simulate cooking in ancient copper cauldrons placed &#8220;per day&#8221; on the fire ) and, until the candied fruit is dissolved into a homogeneous amalgam, the toasted almonds are not added (as much as 27% of the product); then it is cooked again in the oven and left to rest for a whole night.
